Thiakry (West African Millet Pudding)

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg or cinnamon
  • 2 tablespoons powdered sugar (optional, for extra sweetness)

Instructions

  1. Cook the Millet

    Rinse the millet thoroughly under cold water. In a medium saucepan, combine millet, water, and salt. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, stirring occasionally, until the millet is tender and water is absorbed. Remove from heat and let it cool slightly.

  2. Prepare the Pudding Mixture

    In a large bowl, mix yogurt, sweetened condensed milk, vanilla extract, and ground nutmeg (or cinnamon). Add powdered sugar if desired. Stir until smooth.

  3. Combine Millet and Pudding

    Once the millet has cooled to room temperature, fold it gently into the yogurt mixture. Add shredded coconut and raisins, mixing until evenly distributed.

  4. Serve

    Cover the bowl and refrigerate for at least 1-2 hours to allow the flavors to meld and the pudding to firm up slightly. Serve chilled, garnished with extra coconut or a sprinkle of nutmeg.
