Ceebu Jen (Senegalese Fish and Rice)

Ingredients

  • 2 pounds whole fish (snapper, grouper, or tilapia), cleaned and scaled
  • 3 cups broken jasmine or long-grain rice
  • 1/4 cup vegetable oil
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1/4 cup tomato paste
  • 2 carrots, peeled and cut into sticks
  • 1 eggplant, sliced
  • 1 small cabbage, chopped
  • 1 small sweet potato, peeled and cut into chunks
  • 1 hot pepper (optional)
  • 2 teaspoons dried thyme
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • Salt to taste
  • 5 cups water or fish stock
  • Lemon wedges for serving
  • Fresh parsley or coriander for garnish

Instructions

  1. Prepare the Fish

    Clean the fish and make a few diagonal cuts on each side. Season with salt, black pepper, and a pinch of paprika. Set aside while preparing the sauce.

  2. Make the Sauce

    Heat vegetable oil in a large pot over medium heat. Add chopped onions and garlic, sautéing until soft and fragrant. Stir in chopped tomatoes and tomato paste, cooking until the mixture thickens and the oil begins to separate. Add thyme, paprika, and a little salt.

  3. Cook the Vegetables

    Add the carrots, eggplant, cabbage, and sweet potato to the pot. Pour in water or fish stock until the vegetables are just covered. Bring to a boil, then reduce heat and simmer for 10–15 minutes until vegetables begin to soften.

  4. Cook the Fish

    Carefully add the seasoned fish to the pot. Cover and simmer gently for 15–20 minutes, basting occasionally with the sauce. The fish should be cooked through but not falling apart.

  5. Add the Rice

    Rinse the rice under cold water. Gently stir it into the pot, ensuring it is evenly distributed. Cover and simmer on low heat until the rice has absorbed the liquid and is tender, about 20–25 minutes. Check occasionally and add a little water if needed.

  6. Serve

    Plate the rice with the fish on top and arrange the cooked vegetables around the fish. Garnish with fresh parsley or coriander and serve with lemon wedges.
