Prepare the Dough
In a large bowl, combine the flour and salt. Add the vegetable oil and gradually mix in the warm water until a smooth dough forms. Knead on a lightly floured surface for about 5 minutes until elastic. Cover with a clean towel and let it rest for 20–30 minutes.

While the dough rests, prepare your chosen fillings. Ensure all fillings are cooked, seasoned, and cooled slightly to prevent the dough from getting soggy.

Assemble the Pastels
Roll out the dough into thin sheets on a floured surface. Cut the dough into rectangles or circles, about 4–6 inches in size. Place a spoonful of filling in the center of each piece of dough. Fold the dough over the filling and press the edges firmly to seal. Use a fork to crimp the edges. Brush the top with beaten egg for a golden finish.

Fry the Pastels
Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the pastels in batches until golden and crispy, about 2–4 minutes per side. Remove and drain on paper towels.
