- 2 cups coconut milk
- 2 cups chicken broth

- 1 teaspoon turmeric powder
- 2 tablespoons vegetable oil
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1 lime, cut into wedges
- 200 g egg noodles (fresh or dried)
- Crispy fried egg noodles (for garnish)
Toppings (traditional)
- Pickled mustard greens, chopped
- Shallots, thinly sliced
- Fresh cilantro leaves
- Chili oil or chili flakes

Heat vegetable oil in a large pot over medium heat. Add curry paste, curry powder, and turmeric, stirring until fragrant. Slowly add half of the coconut milk, letting it simmer until the oil begins to separate.

Add chicken thighs and coat them with the curry mixture. Pour in the remaining coconut milk and chicken broth. Season with fish sauce, soy sauce, and palm sugar. Simmer uncovered for 30–40 minutes, until the chicken is tender and infused with the rich curry flavor.

Cook the egg noodles according to package instructions. Divide into serving bowls. Reserve a small portion to deep fry until crispy, which will be used as a topping.
