  • ½ cup (0.06 kg) cornmeal
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp cayenne pepper (optional for spice)
  • 1 cup (0.24 L) vegetable oil (for frying)
For the Dipping Sauce:
  • ½ cup (0.12 L) mayonnaise
  • 2 tbsp (0.03 L) fresh lemon juice
  • 1 tbsp (0.015 L) Dijon mustard
  • 1 tbsp (0.015 kg) honey
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Fish

Pat the grouper fillets dry and cut them into even-sized strips.

  2. Set Up the Breading Station

In one bowl, add flour mixed with salt, pepper, garlic powder, and paprika. In another bowl, beat the eggs. In a third bowl, mix panko breadcrumbs and cornmeal.

  3. Coat the Fish

Dredge each grouper strip in the seasoned flour. Dip into the beaten eggs. Coat with the breadcrumb mixture, pressing lightly to ensure an even coating.

  4. Fry the Grouper Fingers

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the coated fish strips in batches for 3–4 minutes until golden brown and crispy. Remove and drain on a paper towel-lined plate.

  5. Prepare the Dipping Sauce

In a small bowl, whisk together mayonnaise, lemon juice, mustard, honey, garlic powder, paprika, salt, and pepper. Mix until smooth and creamy.
