Ajeen (Spiced Indian Flatbread)
Experience the warm, aromatic flavors of Indian cuisine with Ajeen, a traditional spiced flatbread that pairs beautifully with curries, chutneys, or enjoyed on its own. Soft, flavorful, and lightly crisped, Ajeen brings a comforting touch to any meal.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon chili powder (optional)
- 2 tablespoons vegetable oil
- 3/4 cup warm water (adjust as needed)
- Extra flour for rolling
Instructions
-
Prepare the Dough
In a large mixing bowl, combine flour, salt, sugar, baking powder, cumin seeds, coriander powder, turmeric, and chili powder. Mix well. Gradually add warm water and oil, kneading to form a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
-
Shape the Ajeen
Divide the dough into small balls (about the size of a golf ball). On a floured surface, roll each ball into a thin, round flatbread about 6–8 inches in diameter.
-
Cook the Flatbreads
Heat a skillet or griddle over medium-high heat. Place one rolled-out flatbread on the hot skillet. Cook for 1–2 minutes until bubbles start to form, then flip and cook the other side for another 1–2 minutes, pressing gently with a spatula. Repeat with remaining dough.
-
Serve
Serve Ajeen warm, brushed lightly with butter or ghee if desired.
Serving
Pair Ajeen with spicy curries, lentil dishes, yogurt dips, or chutneys. It also works perfectly as a wrap for grilled vegetables or meats. Enjoy the fragrant, spiced layers of this traditional Indian bread, perfect for bringing a taste of home-style comfort to your table.
