Ajeen (Spiced Indian Flatbread)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon chili powder (optional)
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water (adjust as needed)
  • Extra flour for rolling

Instructions

  1. Prepare the Dough

    In a large mixing bowl, combine flour, salt, sugar, baking powder, cumin seeds, coriander powder, turmeric, and chili powder. Mix well. Gradually add warm water and oil, kneading to form a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

  2. Shape the Ajeen

    Divide the dough into small balls (about the size of a golf ball). On a floured surface, roll each ball into a thin, round flatbread about 6–8 inches in diameter.

  3. Cook the Flatbreads

    Heat a skillet or griddle over medium-high heat. Place one rolled-out flatbread on the hot skillet. Cook for 1–2 minutes until bubbles start to form, then flip and cook the other side for another 1–2 minutes, pressing gently with a spatula. Repeat with remaining dough.

  4. Serve

    Serve Ajeen warm, brushed lightly with butter or ghee if desired.
