Thakali Thali (Traditional Nepali Set Meal)

Ingredients

For Dal (Lentil Soup)
  • 1 cup mixed lentils (masoor, moong, and toor)
  • 4 cups water
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons ghee or oil
For Tarkari (Vegetable Curry)
  • 2 medium potatoes, cubed
  • 1 cup cauliflower florets
  • 1 carrot, sliced
  • 1/2 cup green peas
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
For Chicken Curry (Optional)
  • 500 g chicken pieces
  • 2 onions, finely sliced
  • 2 tomatoes, chopped
  • 2 tablespoons yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 3 tablespoons oil
For Achar (Pickle)
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 green chili, chopped
  • 1 tablespoon sesame seeds, roasted and ground
  • Juice of 1 lemon
  • Salt to taste
For Rice and Sides
  • 2 cups basmati rice
  • 1/2 cup sautéed spinach (saag)
  • 1 papad, roasted or fried

Instructions

  1. Prepare the Dal

    Rinse the lentils and boil them with turmeric and salt until soft. In a separate pan, heat ghee and add cumin seeds, onion, garlic, and ginger. Sauté until golden. Add chopped tomatoes and cook until soft. Pour in the boiled lentils and simmer for 10 minutes. Adjust salt to taste.

  2. Cook the Tarkari

    Heat oil in a pan and add cumin seeds. When they crackle, add onion and sauté until translucent. Stir in turmeric, coriander, and garam masala. Add potatoes, cauliflower, carrot, and peas. Mix well and add chopped tomatoes. Cover and cook until vegetables are tender.

  3. Make the Chicken Curry

    Heat oil in a deep pan, add onions, and cook until golden brown. Add ginger-garlic paste, then all spices. Add chicken and stir well to coat with the spices. Add tomatoes and yogurt, mix thoroughly, and cook until the chicken is tender and the gravy thickens.

  4. Prepare the Achar

    In a bowl, combine cucumber, tomato, green chili, sesame powder, lemon juice, and salt. Mix well and set aside.

  5. Cook the Rice and Sides

    Rinse and cook basmati rice until fluffy. Lightly sauté spinach with garlic and salt. Roast or fry papad until crisp.

  6. Assemble the Thali

    Arrange a serving of rice at the center of the plate. Place dal, tarkari, chicken curry, achar, and sautéed spinach in small bowls around it. Add papad on the side.

Serve the Thakali Thali hot for a comforting and satisfying meal. Pair it with a glass of buttermilk or traditional Nepali ghee for an authentic experience.
