Ingredients
- 2 lbs (900 g) lamb, cut into medium pieces
- 3 tablespoons mustard oil (or vegetable oil)
- 2 large onions, finely sliced
- 2 tomatoes, chopped
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons ground coriander
- 1 teaspoon garam masala
- 1 tablespoon chili powder (adjust to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- Salt to taste
- Fresh cilantro leaves for garnish

Marinate the Lamb
In a large bowl, mix lamb pieces with yogurt, half of the ginger-garlic paste, turmeric, salt, and chili powder. Let the lamb marinate for at least 2 hours, or overnight in the refrigerator for best results.

Heat mustard oil in a heavy-bottomed pot over medium heat until it begins to smoke slightly, then reduce the heat. Add cumin seeds and let them sizzle for a few seconds. Add the sliced onions and cook until golden brown.

Add enough water to cover the lamb (about 2 cups), reduce heat to low, and cover the pot. Simmer for 45–60 minutes, or until the lamb is tender and the sauce has thickened. Adjust salt and spice to taste.
