Samsa (Uzbek Meat Pastries)

Ingredients

For the Dough:
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold water (adjust as needed)
  • 1/2 cup unsalted butter or margarine (melted, for layering)
For the Filling:
  • 1 lb (450 g) lamb or beef, finely chopped (not ground)
  • 2 large onions, finely chopped
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon cumin seeds (optional)
  • 2 tablespoons melted butter or oil
For Baking:
  • 1 egg yolk (for brushing)
  • Sesame or nigella seeds (for garnish, optional)

Instructions

  1. Prepare the Dough

    In a large bowl, mix flour and salt. Gradually add cold water and knead into a smooth, elastic dough. Cover with plastic wrap and let it rest for 30 minutes.

  2. Make the Filling

    In a bowl, combine chopped meat, onions, salt, pepper, cumin, and melted butter. Mix well until evenly combined.

  3. Roll and Layer the Dough

    Divide the dough into two parts. Roll out one piece into a thin rectangle. Brush it generously with melted butter. Roll it tightly into a log, then coil it into a spiral. Repeat with the second piece. Cover and chill for 30 minutes to make the dough flaky.

  4. Form the Samsa

    Cut each spiral into equal portions. Flatten each piece and roll it into a small circle. Place a spoonful of filling in the center, then fold into a triangle or square, sealing the edges firmly.

  5. Bake

    Preheat the oven to 400°F (200°C). Arrange the samsas on a baking sheet lined with parchment paper. Brush each with egg yolk and sprinkle with sesame or nigella seeds. Bake for 25–30 minutes, or until golden brown and crisp.

  6. Serve

    Serve the samsas hot, fresh from the oven. They pair perfectly with a side of fresh salad, yogurt sauce, or hot tea.
