Sel Roti (Nepalese Sweet Rice Bread)

Ingredients
- 2 cups rice (preferably medium or long-grain)
- 1/2 cup sugar
- 2 tablespoons ghee or melted butter
- 1/2 teaspoon cardamom powder
- 1 ripe banana (optional, for softness)
- 1/2 cup milk or water (adjust as needed)
- A pinch of salt
- Oil or ghee for deep frying

Prepare the Rice Batter
Wash and soak the rice overnight (at least 6–8 hours).
Drain the water and grind the rice into a smooth batter using a blender. Add a little milk or water as needed to reach a thick, pourable consistency.
In a mixing bowl, combine the rice batter with sugar, ghee, cardamom powder, and a pinch of salt.
Add the ripe banana if using, and blend or whisk until the mixture is smooth and slightly frothy. Let it rest for 15–20 minutes.

Shape the Sel Roti
Heat oil or ghee in a deep frying pan over medium heat. The oil should be hot but not smoking.
Pour the batter in a circular ring shape directly into the hot oil (you can use a piping bag or pour carefully from a spouted bowl).
Fry one or two Sel Rotis at a time, depending on the size of your pan.

Fry Until Golden
Let the Sel Roti cook on one side until golden brown, then gently flip it over using tongs or a slotted spoon.
Fry until both sides are evenly golden and crisp. Remove and drain on paper towels.
