Madrouba (Middle Eastern Savory Rice and Chicken Porridge)

Ingredients

  • 2 cups short-grain rice
  • 1 whole chicken (about 3–4 lbs), cut into pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 6 cups water or chicken broth
  • 3 tablespoons ghee or unsalted butter
  • 1/4 cup slivered almonds, toasted (optional, for garnish)
  • 1/4 cup pine nuts, toasted (optional, for garnish)
  • Lemon wedges, for serving

Instructions

  1. Prepare the Chicken

    In a large pot, add the chicken pieces, chopped onion, garlic, cinnamon, cardamom, nutmeg, black pepper, and salt. Pour in water or chicken broth, enough to cover the chicken. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the chicken is tender.

  2. Cook the Rice

    Remove the chicken from the pot, reserving the broth. Set the chicken aside to cool slightly, then shred the meat, discarding bones and skin. Rinse the rice under cold water until the water runs clear. Add the rice to the reserved broth and cook over low heat, stirring occasionally to prevent sticking. Continue cooking until the rice breaks down and forms a thick, porridge-like consistency (about 30–40 minutes).

  3. Combine and Season

    Stir the shredded chicken back into the rice porridge. Add ghee or butter and mix well until fully incorporated. Adjust seasoning with salt and pepper if needed.

  4. Serve

    Spoon the Madrouba into bowls. Garnish with toasted almonds and pine nuts if desired. Serve hot with lemon wedges on the side for a fresh, tangy finish.
