Shirin Polo (Persian Sweet Rice)

Indulge in the fragrant and subtly sweet flavors of Shirin Polo, a classic Persian rice dish often served at festive occasions, weddings, or family gatherings. This elegant dish combines saffron-infused rice with a mix of dried fruits, nuts, and orange zest, creating a colorful and aromatic centerpiece for any meal.

Ingredients

  • 2 cups basmati rice
  • 3 tablespoons butter or ghee
  • 1/4 teaspoon saffron threads, crushed and dissolved in 2 tablespoons hot water
  • 1/2 cup slivered almonds
  • 1/2 cup pistachios, chopped
  • 1/2 cup dried barberries (or substitute with dried cranberries)
  • 1/2 cup orange peel, finely chopped
  • 1/4 cup sugar (optional, adjust to taste)
  • 1 teaspoon cardamom powder
  • Salt to taste
  • 3 tablespoons vegetable oil

Instructions

  1. Prepare the Rice

    Rinse the basmati rice several times under cold water until the water runs clear. Soak the rice in water with a pinch of salt for 30 minutes, then drain.

  2. Cook the Rice

    Bring a large pot of water to a boil and add the soaked rice. Cook for 5–7 minutes until the rice is slightly soft but still firm in the center. Drain and set aside.

  3. Prepare the Sweet Toppings

    In a small pan, heat 2 tablespoons of butter over medium heat. Add the slivered almonds and pistachios, toasting until lightly golden. Remove and set aside. In the same pan, lightly sauté the dried barberries (or cranberries) with 1 tablespoon sugar until plump, then set aside.

  4. Layer the Rice

    In a large pot, heat the vegetable oil and 1 tablespoon butter. Add half of the rice, then sprinkle half of the saffron water, cardamom, and orange peel over it. Layer the remaining rice and repeat with the remaining saffron water, cardamom, and orange peel. Cover with a lid wrapped in a clean kitchen towel to absorb moisture, and steam over low heat for 30–40 minutes.

  5. Add the Garnish

    Once the rice is fully cooked, gently mix in the toasted almonds, pistachios, and sautéed barberries.

  6. Serve

    Transfer Shirin Polo to a serving platter, making sure the colorful fruits and nuts are visible on top. Pair with Persian stews like Khoresh Gheymé or chicken dishes for a complete celebratory meal.
