Halim (Middle Eastern Wheat and Meat Porridge)

Ingredients

  • 1 cup cracked wheat (burghul or coarse wheat)
  • 1/2 cup white rice (optional, for creaminess)
  • 500g boneless beef or chicken, cut into small pieces
  • 1 large onion, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cardamom (optional)
  • Salt and pepper to taste
  • 6 cups water or broth
  • 2 tablespoons ghee or butter
  • Lemon wedges, for serving
  • Fried onions and chopped parsley, for garnish

Instructions

  1. Prepare the Wheat and Rice

    Rinse the cracked wheat and rice thoroughly. Soak in water for at least 1 hour to soften.

  2. Cook the Meat

    In a large pot, sauté the chopped onion in ghee or butter until soft. Add the meat pieces and cook until lightly browned. Season with salt, pepper, cinnamon, cumin, and cardamom.

  3. Combine and Simmer

    Drain the soaked wheat and rice, then add to the pot with the meat. Pour in water or broth. Bring to a boil, then reduce heat to low. Cover and simmer for 2–3 hours, stirring occasionally to prevent sticking, until the meat is tender and the grains are fully cooked.

  4. Shred the Meat

    Once the meat is tender, remove it from the pot, shred it finely, and return it to the porridge. Stir well to combine.

  5. Finish and Serve

    Adjust seasoning if needed. Serve hot, garnished with fried onions, chopped parsley, and a squeeze of lemon juice.
