Soto (Indonesian Chicken Soup)

Ingredients

  • 1 whole chicken (about 3–4 lbs), cut into pieces
  • 2 liters water
  • 3 kaffir lime leaves
  • 2 stalks lemongrass, bruised
  • 4 slices galangal
  • 5 cloves garlic, minced
  • 5 shallots, minced
  • 2 teaspoons turmeric powder
  • 1 teaspoon coriander powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 hard-boiled eggs, halved
  • Bean sprouts, for serving
  • Fried shallots, for garnish
  • Lime wedges, for serving
  • Rice or vermicelli noodles, cooked, for serving
  • Fresh cilantro and scallions, chopped, for garnish

Instructions

  1. Prepare the Broth

    In a large pot, bring water to a boil. Add the chicken pieces, kaffir lime leaves, lemongrass, galangal, and a pinch of salt. Simmer for about 30–40 minutes until the chicken is cooked through and tender. Remove the chicken and set aside to cool slightly. Strain the broth and return it to the pot.

  2. Make the Spice Paste

    In a small pan, heat vegetable oil over medium heat. Sauté the garlic, shallots, turmeric, and coriander until fragrant, about 2–3 minutes. Add this spice paste to the simmering broth and stir well. Season with salt and pepper to taste.

  3. Prepare the Chicken

    Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the bones and skin. Return the shredded chicken to the broth.

  4. Assemble the Soup

    Place cooked rice or vermicelli noodles in serving bowls. Ladle the hot Soto broth and chicken over the noodles. Top with bean sprouts, halved hard-boiled eggs, fried shallots, fresh cilantro, and scallions. Serve with lime wedges on the side for a bright, tangy finish.
