Baghali Polo (Persian Dill and Fava Bean Rice)

Ingredients

  • 2 cups basmati rice
  • 1 cup fresh or frozen fava beans (or lima beans)
  • 1/2 cup fresh dill, finely chopped
  • 2 tablespoons butter or ghee
  • 1 teaspoon salt, plus more to taste
  • 1/4 teaspoon saffron threads, crushed and dissolved in 2 tablespoons hot water
  • 4 cups water
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water with 1 teaspoon salt for at least 30 minutes, then drain.

  2. Cook the Beans

    Bring a pot of salted water to a boil and blanch the fava beans for 2–3 minutes until tender but still bright green. Drain and set aside.

  3. Layer the Rice

    Bring 4 cups of water to a boil in a large pot. Add the soaked rice and cook for 5–7 minutes until slightly softened but still firm. Drain the rice in a colander.

  4. Steam the Rice

    In the same pot, heat 1 tablespoon vegetable oil over medium heat. Add a layer of rice, followed by a layer of fava beans and dill, then repeat until all ingredients are used, finishing with a rice layer on top. Drizzle the saffron water over the top and dot with butter. Cover with a clean kitchen towel and the lid, and steam on low heat for 30–40 minutes.

  5. Serve

    Carefully fluff the rice with a fork before serving to mix the layers of dill and beans.
