Riblja Čorba (Serbian Fish Soup)

Ingredients

  • 1 kg (2.2 lbs) freshwater fish (carp, catfish, or mixed fish), cleaned and cut into pieces
  • 2 large onions, finely chopped
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon paprika (preferably smoked)
  • 2 bay leaves
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 liters (8 cups) water or fish stock
  • 1 tablespoon tomato paste
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Vegetables

    Heat vegetable oil in a large pot over medium heat. Add the onions, carrots, and bell pepper, sautéing until softened. Stir in the garlic and cook for another minute until fragrant.

  2. Add Spices and Liquids

    Sprinkle paprika over the vegetables and stir quickly to avoid burning. Add tomato paste, bay leaves, black pepper, and salt. Pour in the water or fish stock and bring to a gentle boil.

  3. Cook the Fish

    Add the fish pieces to the simmering soup. Reduce heat to low and cook for 20–25 minutes, or until the fish is tender and cooked through.

  4. Finish the Soup

    Adjust seasoning with salt, pepper, and lemon juice. Remove bay leaves before serving.

  5. Serve

    Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread for a complete meal.
