Dibi (Senegalese Grilled Lamb)

Savor the smoky, flavorful taste of West Africa with Dibi, a traditional Senegalese dish featuring tender, marinated lamb grilled to perfection. Often enjoyed with spicy mustard or onions, Dibi is a festive dish perfect for gatherings or a hearty meal at home.

Ingredients

  • 2 pounds lamb shoulder or ribs, cut into large pieces
  • 4 cloves garlic, minced
  • 1 tablespoon ground black pepper
  • 1 tablespoon ground cayenne pepper (adjust to taste)
  • 1 tablespoon paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (or to taste)
  • 3 tablespoons vegetable oil
  • Juice of 1 lemon
  • 1 large onion, sliced, for garnish
  • Optional: Dijon mustard or hot sauce for serving

Instructions

  1. Marinate the Lamb

    In a large bowl, combine garlic, black pepper, cayenne, paprika, ginger, thyme, salt, vegetable oil, and lemon juice to create a marinade. Coat the lamb pieces thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate.

  2. Prepare the Grill

    Preheat a charcoal or gas grill to medium-high heat. If using charcoal, wait until the coals are glowing red with a light layer of ash.

  3. Grill the Lamb

    Place the marinated lamb pieces on the grill. Cook for 20–30 minutes, turning occasionally, until the meat is browned on all sides and cooked to your desired doneness.

  4. Serve

    Remove the lamb from the grill and let it rest for a few minutes. Serve hot, garnished with sliced onions.
