Maffé, a rich peanut-based stew, is a staple in West African cuisine, especially in Senegal and Mali. Known for its hearty texture and vibrant flavors, this dish is perfect for warming up on a cool evening. The recipe combines tender meat, creamy peanut sauce, and a blend of spices to create a deeply satisfying and nourishing meal.

Ingredients

  • 1 lb (0.45 kg) beef or lamb, cubed
  • 1 large onion, diced
  • 1 large bell pepper, chopped
  • 2 medium carrots, sliced
  • 1 large sweet potato, peeled and cubed
  • 1/2 cup (0.125 kg) peanut butter, unsweetened
  • 3 cups (0.7 L) vegetable or beef broth
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Optional: 1 small chili pepper, diced (for heat)

Instructions

  1. Sauté the Meat

    Heat vegetable oil in a large pot over medium-high heat. Add the cubed meat, season with salt and pepper, and brown on all sides. Remove the meat and set aside.

  2. Cook the Vegetables

    In the same pot, add onions and bell pepper, cooking until softened (about 5 minutes). Stir in the tomato paste, cumin, and paprika, allowing flavors to meld.

  3. Add Broth and Vegetables

    Pour in the broth, scraping up any bits from the pot’s bottom. Add carrots and sweet potatoes, bringing the mixture to a simmer.

  4. Add Peanut Butter and Meat

    Whisk in the peanut butter until smooth. Return the meat to the pot, and add the diced chili pepper if desired for extra heat.

  5. Simmer

    Reduce heat, cover, and let the stew simmer for 30-40 minutes until the meat is tender and the vegetables are cooked through.

  6. Adjust Seasoning

    Taste and adjust the salt, pepper, or peanut butter for extra creaminess if needed.

Serving

Serve maffé hot over steamed rice, couscous, or with a side of crusty bread. Garnish with fresh herbs if desired.
