Kačamak (Balkan Cornmeal Porridge)
Kačamak is a traditional Balkan dish made from simple ingredients yet full of comforting, hearty flavors. Often served as a side or a main meal, its creamy, dense texture paired with cheese or butter makes it a beloved dish across the region. Ingredients
- 2 cups cornmeal (medium or coarse grind)
- 4 cups water
- 1 teaspoon salt
- 2 tablespoons butter
- 1 cup feta cheese or other salty cheese, crumbled
- Optional: sour cream for serving

Prepare the Cornmeal
Bring the water to a boil in a large pot. Add salt, then gradually whisk in the cornmeal to avoid lumps.

Cook the Kačamak
Reduce heat to low and continue stirring frequently. Cook for about 15–20 minutes, or until the mixture thickens and pulls away from the sides of the pot.

Add Butter and Cheese
Remove the pot from heat. Stir in butter until melted and incorporated. Sprinkle crumbled feta cheese over the top, allowing it to soften from the residual heat.

Scoop kačamak onto plates or into bowls. Optionally, add a dollop of sour cream on top for extra richness.
