Ingredients
- 1 cup all-purpose flour (maida)
- 2 tablespoons chickpea flour (besan)
- 1/2 teaspoon baking powder
- 1/4 teaspoon turmeric powder (for color, optional)
- 1/2 cup plain yogurt
- 1/2 cup water (adjust as needed)
- 1 1/2 cups sugar
- 3/4 cup water (for sugar syrup)
- 1/4 teaspoon saffron strands (optional)
- 1/2 teaspoon cardamom powder
- 1 teaspoon lemon juice
- Ghee or oil, for deep frying
Instructions
-
Prepare the Batter
In a mixing bowl, combine all-purpose flour, chickpea flour, baking powder, and turmeric. Add yogurt and water gradually, whisking until you get a smooth, thick batter. Cover and let it ferment for 8–12 hours or overnight for best results.
-
Make the Sugar Syrup
In a saucepan, combine sugar and 3/4 cup water. Heat over medium flame until the sugar dissolves. Add saffron and cardamom powder. Let it simmer until it reaches a one-string consistency. Add lemon juice to prevent crystallization and keep warm.
-
Fry the Jalebi
Heat ghee or oil in a deep frying pan on medium heat. Pour the batter into a squeeze bottle, piping bag, or cloth with a small hole. Squeeze spirals of batter into the hot oil in circular motions. Fry until golden and crisp on both sides.
-
Soak in Syrup
Immediately dip the fried jalebis into the warm sugar syrup for 1–2 minutes, ensuring they soak well but remain crisp. Remove and place on a plate.
-
Serve
Serve Jalebi warm or at room temperature. They pair beautifully with rabri (sweet condensed milk) or enjoy them on their own.
Serving
Delight in the vibrant, sweet, and crunchy spirals of Jalebi, a treat that embodies the festive spirit of Indian cuisine. Perfect for sharing, these golden spirals will enchant your taste buds and bring smiles to every table.
