Rožata (Croatian Custard Dessert)
Rožata is a traditional Croatian custard dessert, often compared to crème caramel or flan. Originating from the Dalmatian region, this sweet treat is flavored with rose liqueur, giving it a distinctive taste and aroma. Served chilled with a delicate caramel sauce, Rožata is a staple at Croatian celebrations.
Ingredients
- 4 cups (1 liter) whole milk
- 1 cup (100 g) sugar
- 6 large eggs
- 1/4 cup (60 ml) rose liqueur (or vanilla extract)
- 1/4 cup (60 g) sugar for caramel
- Zest of 1 lemon

Prepare the Caramel
In a small saucepan, heat 1/4 cup sugar over medium heat until it melts and turns golden. Pour the caramel into a round baking dish, tilting to coat the bottom evenly. Set aside to cool.

Make the Custard
Heat the milk in a saucepan over medium heat until warm but not boiling. Remove from heat and allow to cool slightly.

Mix the Custard Base
In a bowl, whisk together the eggs and 1 cup sugar until pale and frothy. Slowly add the warmed milk while continuing to whisk. Stir in the rose liqueur and lemon zest.

Combine and Bake
Pour the custard mixture over the cooled caramel. Place the dish in a larger pan filled halfway with hot water (water bath). Bake at 320°F (160°C) for about 60 minutes, until set but slightly jiggly in the center.

Cool and Serve
Allow Rožata to cool completely, then refrigerate for at least 2 hours or overnight. To serve, run a knife around the edges, invert onto a plate, and let the caramel drizzle over the custard.
