Thiou (Spiced Peanut Stew)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 medium tomatoes, chopped
  • 1 red bell pepper, chopped
  • 2 cups vegetable broth
  • 1 cup smooth peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 cups chopped vegetables (sweet potato, carrots, or eggplant)
  • 1 can chickpeas, drained and rinsed
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the Base

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the garlic and ginger, cooking for another 1–2 minutes until fragrant.

  2. Add Vegetables and Spices

    Add the chopped tomatoes and red bell pepper to the pot. Cook for 5–7 minutes until the vegetables begin to soften. Stir in cumin, smoked paprika, cayenne, salt, and black pepper.

  3. Simmer the Stew

    Pour in the vegetable broth and bring to a simmer. Stir in the peanut butter until fully incorporated. Add the chopped vegetables and chickpeas. Cover and simmer for 20–25 minutes, or until the vegetables are tender and the stew is thick and creamy.

  4. Serve

    Stir in lime juice to brighten the flavors. Adjust seasoning as needed. Serve the Thiou hot, garnished with fresh cilantro.
