Mathrooba (Traditional Middle Eastern Rice Dish)

Ingredients

  • 2 cups basmati rice
  • 1 lb chicken pieces or lamb, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 4 cups chicken or lamb broth
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped fresh parsley or coriander, for garnish
  • Optional: toasted almonds or pine nuts for topping

Instructions

  1. Prepare the Meat

    Heat vegetable oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until golden and fragrant. Add the meat and cook until browned on all sides.

  2. Add Spices and Broth

    Stir in cinnamon, cardamom, turmeric, cumin, salt, and black pepper. Pour in the broth and bring to a boil. Reduce heat and simmer for 30–40 minutes, or until the meat is tender.

  3. Cook the Rice

    Rinse the rice under cold water until the water runs clear. Add the rice to the simmering meat and broth mixture. Cover and cook over low heat for 20–25 minutes, or until the rice is fully cooked and has absorbed the flavors.

  4. Finish and Serve

    Fluff the rice gently with a fork. Transfer Mathrooba to a serving dish and garnish with chopped parsley or coriander. Sprinkle toasted almonds or pine nuts on top if desired.
