Ingredients
- 1 lb (450 g) beef sirloin or tenderloin, cut into thin strips
- 2 tablespoons vegetable oil
- 1 large red onion, sliced into thick strips
- 2 large tomatoes, cut into wedges
- 1-2 yellow chili peppers or aji amarillo, sliced (optional for heat)
- 3 tablespoons soy sauce
- 2 tablespoons red wine vinegar
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 2 cups cooked white rice
- 2 cups French fries (store-bought or homemade)
Instructions
-
Prepare the Beef
Season the beef strips with salt, pepper, and cumin. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Quickly sear the beef strips until browned but still tender, about 2-3 minutes. Remove from the skillet and set aside.
-
Sauté the Vegetables
In the same skillet, add the remaining oil and sauté the onions and chili peppers for 2 minutes until slightly softened. Add the tomato wedges and cook for another 1-2 minutes, just until they begin to release their juices.
-
Combine and Season
Return the beef to the skillet with the vegetables. Add soy sauce and red wine vinegar, tossing everything together over high heat for 1-2 minutes. Adjust seasoning with salt and pepper to taste.
-
Serve
Plate the dish by placing a portion of rice on each plate, topping with the beef and vegetable mixture, and finishing with a side of French fries. Garnish with fresh chopped cilantro for a burst of flavor and color.
Serving
Lomo Saltado is best enjoyed immediately while hot, with the contrast of crispy fries, tender beef, and tangy vegetables. Pair with a light salad or a refreshing Peruvian beverage like chicha morada for an authentic experience. This dish perfectly balances savory, tangy, and slightly spicy notes, making it a standout on any table.
