Ingredients

  • 1 lb (450 g) beef sirloin or tenderloin, cut into thin strips
  • 2 tablespoons vegetable oil
  • 1 large red onion, sliced into thick strips
  • 2 large tomatoes, cut into wedges
  • 1-2 yellow chili peppers or aji amarillo, sliced (optional for heat)
  • 3 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 2 cups cooked white rice
  • 2 cups French fries (store-bought or homemade)

Instructions

  1. Prepare the Beef

    Season the beef strips with salt, pepper, and cumin. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Quickly sear the beef strips until browned but still tender, about 2-3 minutes. Remove from the skillet and set aside.

  2. Sauté the Vegetables

    In the same skillet, add the remaining oil and sauté the onions and chili peppers for 2 minutes until slightly softened. Add the tomato wedges and cook for another 1-2 minutes, just until they begin to release their juices.

  3. Combine and Season

    Return the beef to the skillet with the vegetables. Add soy sauce and red wine vinegar, tossing everything together over high heat for 1-2 minutes. Adjust seasoning with salt and pepper to taste.

  4. Serve

    Plate the dish by placing a portion of rice on each plate, topping with the beef and vegetable mixture, and finishing with a side of French fries. Garnish with fresh chopped cilantro for a burst of flavor and color.
