Anticuchos (Peruvian Grilled Skewers)

Ingredients

  • 1 pound beef heart or sirloin, cut into 1-inch cubes
  • 3 tablespoons vegetable oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon ají panca paste (or substitute with mild chili paste)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 1 lime, cut into wedges, for serving

Instructions

  1. Prepare the Marinade

    In a bowl, combine vegetable oil, red wine vinegar, minced garlic, ají panca paste, cumin, paprika, salt, and pepper. Mix well to create a smooth marinade.

  2. Marinate the Beef

    Add the beef cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.

  3. Assemble the Skewers

    Thread the marinated beef cubes onto the soaked wooden skewers, leaving a little space between each piece to ensure even cooking.

  4. Grill the Anticuchos

    Preheat a grill or grill pan to medium-high heat. Grill the skewers for about 3–4 minutes per side, or until the beef is cooked to your desired doneness, with a nice char on the outside.

  5. Serve

    Serve hot with lime wedges and your choice of sides, such as boiled potatoes, corn, or a fresh salad. For an authentic touch, drizzle extra marinade over the skewers before serving.
