Pączki (Polish Doughnuts)

Ingredients
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup warm water (110°F / 43°C)
- 1/2 cup granulated sugar
- 1/2 cup whole milk, warmed
- 3 large egg yolks
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 4 cups all-purpose flour, plus extra for dusting
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- Vegetable oil, for frying
- 1 cup fruit jam or custard, for filling
- Powdered sugar, for dusting

Prepare the Dough
In a small bowl, dissolve yeast in warm water with a pinch of sugar. Let it sit for 5–10 minutes until foamy. In a large mixing bowl, combine the remaining sugar, warm milk, egg yolks, eggs, vanilla extract, and almond extract if using. Mix well. Gradually add the flour and salt, mixing until a soft dough forms. Incorporate the softened butter, kneading until the dough is smooth and elastic, about 8–10 minutes.

Let the Dough Rise
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1–2 hours, or until doubled in size.

Shape the Pączki
Punch down the dough and roll it out on a floured surface to about 1/2-inch thickness. Use a round cutter (about 3 inches) to cut circles. Place them on a floured tray and cover loosely with a towel. Let rise for 30–45 minutes.

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the doughnuts in batches, about 2–3 minutes per side, until golden brown. Remove and drain on paper towels.
