Quzi (Middle Eastern Spiced Lamb Rice)
Quzi is a flavorful Middle Eastern dish featuring tender lamb, aromatic rice, and a blend of warm spices. Traditionally served at celebrations and special gatherings, Quzi delivers a rich, hearty experience that combines the textures of slow-cooked meat with fragrant, spiced rice.
Ingredients
- 2 lbs (900 g) lamb shoulder or leg, bone-in
- 2 cups basmati rice
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup vegetable oil or ghee
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground allspice
- 1 teaspoon ground black pepper
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon ground cloves
- 2 cups water or lamb broth
- 1/2 cup roasted nuts (almonds or pine nuts)
- 1/2 cup raisins or dried apricots (optional)
- Fresh parsley or coriander for garnish

Prepare the Lamb
Heat oil or ghee in a large pot over medium heat. Brown the lamb on all sides until golden. Remove and set aside.

Cook the Aromatics
In the same pot, add the chopped onion and garlic. Sauté until soft and fragrant. Stir in the spices: cinnamon, cardamom, allspice, cloves, black pepper, and salt.

Simmer the Lamb
Return the lamb to the pot, add water or broth, cover, and simmer on low heat for 1.5–2 hours until the meat is tender and falling off the bone.

Prepare the Rice
Rinse the basmati rice thoroughly. In a separate pan, boil water, add a pinch of salt, and cook the rice until almost done (al dente). Drain and set aside.

Assemble Quzi
Layer the cooked rice over the tender lamb in the pot. Cover and steam on very low heat for 15–20 minutes to let flavors meld.

Garnish and Serve
Top with roasted nuts and dried fruits. Sprinkle with fresh parsley or coriander for color. Serve hot.
