Matoke (Ugandan Steamed Plantains)

Ingredients
- 6 green plantains, peeled and chopped
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce or chopped tomatoes
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin (optional)
- 1 cup water or vegetable broth
- 1/4 cup chopped fresh cilantro or parsley for garnish

Prepare the Plantains
Peel the green plantains and chop them into large chunks. Rinse with water to remove excess starch.

Cook the Aromatics
Heat vegetable oil in a large saucepan over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent.

Simmer with Tomatoes
Add the tomato sauce or chopped tomatoes to the pan. Season with salt, pepper, and cumin if using. Cook for 5 minutes, stirring occasionally, until the mixture thickens slightly.

Steam the Plantains
Add the chopped plantains to the pan and pour in water or vegetable broth. Cover and simmer over low heat for about 20–25 minutes, or until the plantains are soft and tender. Stir occasionally to prevent sticking.

Mash the Plantains
Once cooked, gently mash the plantains with a potato masher or fork until smooth but still slightly chunky. Adjust seasoning if needed.
