Holubtsi (Ukrainian Cabbage Rolls)

Ingredients

For the Cabbage Rolls:
  • 1 large head of cabbage
  • 1 pound ground pork or beef (or a mix)
  • 1 cup cooked rice
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large carrot, grated
  • 2 tablespoons vegetable oil
  • 1 can (14 oz) tomato sauce or crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh dill or parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Cabbage Leaves

    Bring a large pot of water to a boil. Carefully remove the core from the cabbage and separate the leaves. Blanch the leaves in boiling water for 2–3 minutes until pliable, then drain and set aside.

  2. Make the Filling

    In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Sauté the onion, garlic, and carrot until soft. In a large bowl, combine the cooked vegetables with ground meat, cooked rice, salt, and pepper. Mix thoroughly.

  3. Assemble the Holubtsi

    Place a spoonful of filling onto each cabbage leaf. Fold the sides over the filling and roll tightly from the stem end. Repeat with remaining leaves and filling.

  4. Cook the Rolls

    In a large pot, layer some tomato sauce on the bottom. Arrange the cabbage rolls seam-side down, then cover with remaining tomato sauce. Add tomato paste, sugar, and a pinch of salt and pepper. Cover and simmer over low heat for 45–60 minutes, until the meat is fully cooked and the cabbage is tender.

  5. Serve

    Serve Holubtsi hot, spooning extra tomato sauce over the rolls. Garnish with fresh dill or parsley if desired.
