Varenyky (Ukrainian Dumplings)

Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 cup warm water
- 1 large egg
- 1 teaspoon salt
- 2 tablespoons vegetable oil
For the Filling (Potato & Cheese):
- 2 cups mashed potatoes
- 1 cup farmer’s cheese or ricotta
- 1 small onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
For Serving:
- Sour cream
- Chopped fresh dill or parsley (optional)
- Melted butter (optional)

Prepare the Dough
In a large bowl, combine flour and salt. In a separate bowl, whisk together warm water, egg, and vegetable oil. Gradually add the wet mixture to the flour, mixing until a dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic. Cover and let rest for 20–30 minutes.

Prepare the Filling
In a skillet, melt butter over medium heat and sauté the chopped onion until soft and golden. In a mixing bowl, combine mashed potatoes, cheese, sautéed onion, salt, and pepper. Mix until smooth and well combined.

Assemble the Varenyky
Roll out the dough on a floured surface to about 1/8-inch thickness. Cut circles using a glass or cookie cutter (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle. Fold the dough over the filling to form a half-moon shape, pressing the edges firmly to seal.

Cook the Varenyky
Bring a large pot of salted water to a boil. Carefully drop in the Varenyky in batches. Cook until they float to the surface, then simmer for an additional 2–3 minutes. Remove with a slotted spoon and drain.

Serve hot, topped with sour cream and a drizzle of melted butter. Garnish with fresh dill or parsley for extra flavor and color.
