Chicken Kyiv (Ukrainian Butter-Stuffed Chicken)

Ingredients

For the Herb Butter:
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper to taste
For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons vegetable oil
  • Lemon wedges, for serving

Instructions

  1. Prepare the Herb Butter

    In a small bowl, mix butter, garlic, parsley, dill, salt, and pepper until smooth. Shape into a log, wrap in plastic wrap, and chill until firm, about 30 minutes.

  2. Prepare the Chicken

    Place each chicken breast between plastic wrap and gently pound to 1/2 inch thickness. Season with salt and pepper. Place a piece of chilled herb butter in the center, fold the sides over, and roll tightly, securing with toothpicks.

  3. Bread the Chicken

    Dredge each roll in flour, shaking off excess. Dip in beaten eggs, then coat with breadcrumbs.

  4. Cook the Chicken

    Preheat oven to 375°F (190°C). Heat oil in an oven-safe skillet over medium-high heat and brown chicken on all sides, 2–3 minutes per side. Transfer skillet to the oven and bake 20–25 minutes until cooked through and golden.

  5. Serve

    Remove toothpicks and serve immediately with lemon wedges.
