Gol Gappa (Indian Street Snack)

Gol Gappa, also known as Pani Puri, is a popular Indian street snack that combines crisp, hollow puris with a tangy, spicy flavored water and a savory filling. This bite-sized treat delivers a burst of flavors in every crunch and is perfect for parties, festive occasions, or a fun snack at home.

Ingredients

For the Puris:
  • 1 cup semolina (sooji)
  • 2 tablespoons all-purpose flour (maida)
  • A pinch of salt
  • Water (as needed to make dough)
  • Oil for deep frying
For the Filling:
  • 1 cup boiled chickpeas or boiled moong beans
  • 2 medium boiled potatoes, peeled and mashed
  • 1 teaspoon chaat masala
  • 1/2 teaspoon roasted cumin powder
  • Salt to taste
For the Flavored Water (Pani):
  • 1 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 2-3 green chilies (adjust to taste)
  • 1-inch piece ginger
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt
  • 1/2 teaspoon chaat masala
  • 4 cups cold water
  • 1-2 tablespoons tamarind pulp (optional, for tanginess)

Instructions

  1. Prepare the Puris

    Mix semolina, all-purpose flour, and salt in a bowl. Gradually add water to form a stiff dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes. Roll out the dough thinly and cut into small circles (about 2 inches in diameter). Heat oil in a deep pan and fry the puris until they puff up and turn golden brown. Drain on paper towels.

  2. Prepare the Filling

    In a bowl, combine mashed potatoes and boiled chickpeas. Add chaat masala, cumin powder, and salt. Mix well and set aside.

  3. Prepare the Flavored Water (Pani)

    Blend mint leaves, coriander leaves, green chilies, and ginger with a little water to make a smooth paste. In a large bowl, mix the paste with cold water, tamarind pulp, roasted cumin powder, black salt, and chaat masala. Chill in the refrigerator.

  4. Assemble the Gol Gappa

    Gently crack the top of each puri to make a small opening. Fill each puri with a small spoonful of the potato-chickpea mixture. Dip or pour the chilled flavored water into the puri just before eating.
