Mandasi (Kenyan Fried Dough Balls)

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder

  • 1/2 cup warm milk
  • 1/4 cup water (adjust as needed)
  • 2 teaspoons active dry yeast
  • 1 large egg
  • 1/4 cup melted butter or vegetable oil
  • Vegetable oil for frying

Instructions

  1. Prepare the Dough

    In a small bowl, dissolve the yeast in warm water and let it sit for 5–10 minutes until frothy. In a large mixing bowl, combine flour, sugar, baking powder, salt, and cardamom. Make a well in the center and add the yeast mixture, warm milk, egg, and melted butter. Mix until a soft dough forms.

  2. Knead and Rest

    Turn the dough onto a lightly floured surface and knead for 5–7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean cloth, and let it rise for 1–2 hours, or until it doubles in size.

  3. Shape the Mandasi

    Punch down the dough and divide it into small portions. Roll each portion into a smooth ball, about the size of a golf ball.

  4. Fry the Mandasi

    Heat vegetable oil in a deep frying pan over medium heat. Fry the dough balls in batches until golden brown on all sides, about 3–5 minutes per batch. Remove and drain on paper towels.

  5. Serve

    Serve Mandasi warm, plain or dusted with powdered sugar. They also pair wonderfully with tea, coffee, or a sweet dipping sauce.
