Ttavas

Ttavas is a traditional Cypriot lamb stew, slow-cooked with a fragrant blend of spices, tomatoes, onions, and rice. Known for its hearty, rich flavors, this dish is often enjoyed as a comforting family meal. Cooked in a clay pot, Ttavas delivers a depth of flavor that makes it stand out in Cypriot cuisine. This recipe will show you how to recreate this authentic dish at home.

Ingredients

  • 2 lb (0.9 kg) lamb shoulder, cut into chunks
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1/2 cup (115 g) uncooked rice
  • 1/4 cup (60 ml) olive oil
  • 1 tsp (5 g) ground cinnamon
  • 1 tsp (5 g) ground cumin
  • 1 tsp (5 g) ground coriander
  • 1/2 tsp (2.5 g) black pepper
  • 1 tsp (5 g) salt
  • 1 cup (240 ml) water
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Meat and Vegetables

Preheat the oven to 350°F (175°C). In a large bowl, combine the lamb chunks, sliced onions, garlic, chopped tomatoes, olive oil, cinnamon, cumin, coriander, salt, and pepper. Mix well to coat the lamb with the spices.

  2. Assemble in a Clay Pot or Casserole Dish

Transfer the lamb mixture into a clay pot or a heavy casserole dish. Add the uncooked rice and pour the water over the mixture.

  3. Cover and Cook

Cover the pot with a lid or foil. Place in the preheated oven and cook for about 2 to 2.5 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally, and if the dish looks dry, add a little more water.

  4. Garnish and Serve

Once cooked, remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.

Serving

Ttavas is best served hot, straight from the pot. It pairs wonderfully with a fresh green salad, crusty bread, or even a side of roasted vegetables. The richness of the lamb and the warm spices make it a comforting and filling meal for any occasion.

Ttavas is a true celebration of Cypriot flavors, combining tender lamb, warming spices, and a slow-cooking process that ensures every bite is packed with rich, savory goodness. Whether you’re new to Cypriot cuisine or a longtime fan, this dish is sure to satisfy.
