Maheu (Fermented Corn Drink)

Enjoy the naturally sweet and slightly tangy flavors of Maheu, a traditional African fermented corn drink. Rich in probiotics and nutrients, Maheu is both refreshing and nourishing. Perfect as a snack, breakfast drink, or a cooling beverage on a hot day, it brings a taste of African culinary heritage to your table.

Ingredients

  • 2 cups cornmeal (white or yellow)
  • 6 cups water
  • ½ cup sugar (adjust to taste)
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • ½ cup milk or yogurt (optional, for creamier texture)

Instructions

  1. Cook the Cornmeal

    In a large saucepan, bring 4 cups of water to a boil. Gradually stir in the cornmeal, reducing the heat to low. Cook while stirring constantly until the mixture thickens, about 10–15 minutes.

  2. Cool the Mixture

    Remove from heat and add the remaining 2 cups of cold water. Stir well to loosen the thickened cornmeal. Allow it to cool to room temperature.

  3. Sweeten and Flavor

    Add sugar, salt, and vanilla extract (if using) to the cooled mixture. Stir until fully dissolved. For a creamier version, mix in milk or yogurt at this stage.

  4. Ferment (Optional)

    Cover the mixture and leave it at room temperature for 12–24 hours to ferment slightly, producing a mildly tangy flavor. Adjust fermentation time according to taste.

  5. Serve

    Strain the mixture if desired for a smoother texture. Serve chilled in glasses, over ice if preferred.
