Maheu (Fermented Corn Drink)
Enjoy the naturally sweet and slightly tangy flavors of Maheu, a traditional African fermented corn drink. Rich in probiotics and nutrients, Maheu is both refreshing and nourishing. Perfect as a snack, breakfast drink, or a cooling beverage on a hot day, it brings a taste of African culinary heritage to your table.
Ingredients
- 2 cups cornmeal (white or yellow)
- 6 cups water
- ½ cup sugar (adjust to taste)
- ½ teaspoon salt
- 1 teaspoon vanilla extract (optional)
- ½ cup milk or yogurt (optional, for creamier texture)
Instructions
-
Cook the Cornmeal
In a large saucepan, bring 4 cups of water to a boil. Gradually stir in the cornmeal, reducing the heat to low. Cook while stirring constantly until the mixture thickens, about 10–15 minutes.
-
Cool the Mixture
Remove from heat and add the remaining 2 cups of cold water. Stir well to loosen the thickened cornmeal. Allow it to cool to room temperature.
-
Sweeten and Flavor
Add sugar, salt, and vanilla extract (if using) to the cooled mixture. Stir until fully dissolved. For a creamier version, mix in milk or yogurt at this stage.
-
Ferment (Optional)
Cover the mixture and leave it at room temperature for 12–24 hours to ferment slightly, producing a mildly tangy flavor. Adjust fermentation time according to taste.
-
Serve
Strain the mixture if desired for a smoother texture. Serve chilled in glasses, over ice if preferred.
Serving
Maheu can be enjoyed as a refreshing drink on its own or paired with snacks like roasted peanuts or fried pastries. It’s nourishing, probiotic-rich, and offers a unique, slightly sweet tang that is beloved across many African cultures.
