- 4 cups water (or mushroom soaking liquid)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 scotch bonnet pepper (optional, for heat)

Rinse the Djon Djon mushrooms and soak them in 4 cups of hot water for 30–45 minutes. Strain the liquid into a bowl, reserving it for cooking the rice. Chop the mushrooms if desired.
