Lambi (Caribbean Conch Stew)

Ingredients

  • 2 lbs conch (cleaned and tenderized)

  • 2 tomatoes, chopped
  • 2 sprigs thyme

  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 2 cups coconut milk
  • 1 cup water or seafood broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Conch

    Rinse the conch under cold water, then tenderize it using a meat mallet or by slicing it thinly. Marinate with lime juice for 20–30 minutes to soften and enhance the flavor.

  2. Sauté the Vegetables

    Heat vegetable oil in a large pot over medium heat. Add onions, bell peppers, and garlic, sautéing until softened and fragrant. Stir in tomatoes, thyme, paprika, allspice, scotch bonnet pepper, salt, and pepper. Cook for 3–5 minutes until the mixture becomes aromatic.

  3. Cook the Conch

    Add the conch to the pot and stir to combine with the vegetable mixture. Pour in coconut milk and water or broth. Bring to a gentle boil, then reduce heat and simmer for 45–60 minutes, or until the conch is tender and the flavors meld together.

  4. Finish and Serve

    Remove from heat and stir in fresh parsley. Adjust seasoning if necessary.
