Deruny (Ukrainian Potato Pancakes)

Ingredients

  • 4 large potatoes, peeled and grated

  • 1 large egg

Instructions

  1. Prepare the Potato Mixture

    Place the grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out excess liquid. Transfer the potatoes and onion to a large bowl. Add the egg, flour, salt, and black pepper. Mix until well combined.

  2. Cook the Pancakes

    Heat vegetable oil in a large skillet over medium heat. Scoop a spoonful of the potato mixture and flatten it into a pancake in the skillet. Fry each pancake for 3–4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.

  3. Serve
