Goep (Tripe Curry)

Goep, also known as tripe curry, is a traditional Bhutanese delicacy that showcases the country’s love for rich and hearty flavors. This dish features cleaned and boiled tripe simmered in a flavorful curry sauce, infused with traditional spices and chili for a comforting and aromatic meal. Ingredients

Main Ingredients:
  • 2 lbs (0.9 kg) tripe, thoroughly cleaned
  • 1 large onion, finely chopped (0.3 lbs / 0.14 kg)
  • 2 medium tomatoes, diced (0.5 lbs / 0.23 kg)
  • 2 tablespoons vegetable oil
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 cup (0.24 L) water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Step 1: Prepare the Tripe

    Wash the tripe thoroughly under running water, then boil it in salted water for 45 minutes to 1 hour until tender. Drain and cut into bite-sized pieces.

  2. Step 2: Make the Curry Base

    Heat vegetable oil in a large pan over medium heat. Add chopped onions and sauté until golden brown. Stir in the minced garlic, ginger, and green chilies. Cook for 2 minutes until fragrant. Add the diced tomatoes and cook until softened, forming a thick base.

  3. Step 3: Cook the Goep

    Add the turmeric powder, chili powder, garam masala, and salt to the curry base. Stir well. Add the boiled tripe and mix to coat it evenly with the spices. Pour in the water and let it simmer for 15–20 minutes, allowing the flavors to blend.

  4. Step 4: Garnish and Serve

    Sprinkle fresh cilantro on top for a burst of freshness.
