Fataya (West African Fried Pastries)

Ingredients

For the Dough:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup warm water (adjust as needed)
For the Filling:
  • 1/2 pound ground beef, chicken, or tuna
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small chili pepper, finely chopped (optional)
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
For Frying:
  • Vegetable oil, enough for deep frying

Instructions

  1. Prepare the Dough

    In a large bowl, mix flour and salt. Gradually add oil and warm water, kneading until a smooth, elastic dough forms. Cover with a clean cloth and let it rest for 30 minutes.

  2. Prepare the Filling

    Heat 2 tablespoons of oil in a skillet over medium heat. Sauté onions, garlic, and chili until fragrant. Add the ground meat or fish and cook until browned. Stir in ginger, curry powder, salt, and pepper. Remove from heat and let it cool slightly.

  3. Assemble the Fataya

    Divide the dough into small balls. Roll each ball into a thin circle. Place a spoonful of filling in the center, fold the dough over to create a half-moon shape, and press the edges firmly to seal.

  4. Fry the Fataya

    Heat oil in a deep fryer or large skillet to medium-high heat. Fry the pastries in batches until golden brown and crispy, about 3-5 minutes per side. Remove and drain on paper towels.

  5. Serve

    Serve Fataya warm as a snack, appetizer, or part of a meal. Pair with spicy dipping sauces or enjoy on their own for a burst of West African flavor.
