Ćevapi (Balkan Grilled Sausages)

Ingredients

  • 500g ground beef (preferably 20% fat)
  • 250g ground lamb (optional, can use all beef)
  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 1 teaspoon baking soda
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon cold water

Instructions

  1. Prepare the Meat Mixture

    In a large bowl, combine the ground beef and lamb. Add the grated onion, minced garlic, baking soda, paprika, salt, black pepper, and cayenne if using. Pour in the cold water. Mix thoroughly with your hands until the mixture is sticky and well combined.

  2. Shape the Ćevapi

    With damp hands, shape the mixture into small finger-like sausages, about 3 inches long and 1 inch thick. Place them on a tray lined with parchment paper. Cover and refrigerate for at least 1 hour to let the flavors meld.

  3. Grill the Ćevapi

    Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates. Grill the Ćevapi for about 4–5 minutes per side, turning occasionally, until browned and cooked through.

  4. Serve

    Serve Ćevapi hot with traditional accompaniments such as flatbread (somun or pita), chopped onions, ajvar (red pepper spread), and sour cream.
