Chorek (Azerbaijani Classic Holiday Bread)

Ingredients
- 4 cups all-purpose flour
- 1/2 cup sugar
- 1 packet (7 g) active dry yeast
- 1/2 teaspoon salt
- 1 cup warm milk (about 110°F / 43°C)
- 1/3 cup unsalted butter, melted
- 2 large eggs (plus 1 for egg wash)
- 1 teaspoon vanilla extract
- Optional: sesame seeds or poppy seeds for topping

Prepare the Dough
In a small bowl, dissolve the yeast in warm milk with 1 teaspoon of sugar. Let it sit for 5–10 minutes until foamy. In a large bowl, combine flour, remaining sugar, and salt. Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until a soft dough forms. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Shape the Chorek
Punch down the dough and divide it into strands for braiding. Braid the strands into a traditional plait and place the loaf on a greased or parchment-lined baking sheet.

Second Rise
Cover the loaf and let it rise for another 30–45 minutes until puffy.

Bake
Preheat the oven to 350°F (175°C). Beat the remaining egg and brush it over the loaf. Sprinkle with sesame or poppy seeds if desired. Bake for 25–30 minutes, or until golden brown and hollow-sounding when tapped.
