  • 2 tomatoes, chopped

  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon curry powder
  • 1 cup coconut milk
  • 1 cup water or fish/chicken stock
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • Juice of half a lime

Instructions

  1. Prepare the Base

    Heat vegetable oil in a large pan over medium heat. Sauté onions until golden brown, then add garlic and ginger, cooking until fragrant.
