Gok Chuchvara (Central Asian Dumplings)

Ingredients

For the Dough:
  • 2 cups all-purpose flour

  • 1 large egg

  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon ground cumin (optional)
For the Broth:
  • 4 cups water or beef/chicken broth
  • 1 carrot, thinly sliced
  • 1 small onion, sliced
  • Salt to taste
To Serve:
  • Fresh dill or parsley, chopped
  • Sour cream or yogurt (optional)

Instructions

  1. Prepare the Dough

    In a large bowl, combine flour and salt. Add the egg and water gradually, mixing until a smooth, elastic dough forms. Knead for 5–7 minutes, then cover and let rest for 20 minutes.

  2. Make the Filling

    In a bowl, combine ground meat, chopped onion, garlic, salt, pepper, and cumin (if using). Mix well until all ingredients are evenly incorporated.

  3. Shape the Dumplings

    Roll the dough on a floured surface until thin. Cut into small squares, about 2–3 inches each. Place a small spoonful of filling in the center of each square. Fold the dough over the filling to form a triangle or rectangle and pinch the edges to seal tightly.

  4. Cook the Dumplings

    Bring the broth or water to a gentle boil in a large pot. Add sliced onion and carrot. Carefully drop the dumplings into the simmering broth. Cook for 7–10 minutes, or until the dumplings float to the surface and the filling is cooked through.

  5. Serve

    Ladle the dumplings into bowls with some broth and vegetables. Garnish with fresh dill or parsley. Serve with sour cream or yogurt if desired.
