- 8 oz (225 g) chow mein noodles or thin egg noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 1 small onion, thinly sliced
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1 bell pepper, thinly sliced
- 1 cup bean sprouts
- 8 oz (225 g) chicken, beef, pork, or tofu, thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions, sliced for garnish

Prepare the Noodles
Cook the chow mein noodles according to package instructions. Drain and set aside, tossing with a little oil to prevent sticking.

Cook the Protein
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the protein of your choice and stir-fry until fully cooked. Remove from the pan and set aside.

Stir-Fry the Vegetables
In the same skillet, add the remaining oil. Sauté garlic and ginger for 30 seconds until fragrant. Add onion, cabbage, carrots, and bell pepper. Stir-fry for 3–5 minutes until vegetables are tender but still crisp.

Return the cooked protein to the pan. Add the cooked noodles and toss everything together. Pour in soy sauce, oyster sauce, hoisin sauce, and sesame oil. Stir-fry for another 2–3 minutes, ensuring noodles and vegetables are evenly coated.
