Briouats (Moroccan Stuffed Pastries)

Ingredients

  • 250g ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • Salt to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 6 sheets of filo or warqa pastry
  • 50g melted butter or vegetable oil (for brushing)
  • Vegetable oil for frying

Instructions

  1. Prepare the Filling

    In a skillet over medium heat, sauté the onion and garlic until softened. Add the ground meat, spices, salt, and pepper. Cook until the meat is browned and fully cooked. Stir in parsley and cilantro, then remove from heat and let cool slightly.

  2. Assemble the Briouats

    Cut the filo sheets into strips (about 3 inches wide). Place a small spoonful of filling at one end of each strip. Fold the strip over the filling to form a triangle, continuing to fold along the length of the strip until the filling is completely enclosed. Brush the edges with melted butter or oil to seal.

  3. Cook the Briouats

    Heat vegetable oil in a deep pan over medium heat. Fry the briouats until golden brown and crispy, turning occasionally to ensure even cooking. Remove and drain on paper towels.

  4. Serve

    Serve warm as an appetizer or snack. Briouats pair beautifully with a side of harissa, yogurt sauce, or a fresh salad.
