- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 2 bay leaves
- 4 cups chicken or lamb broth
- Salt to taste
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- 1/4 cup fried almonds or cashews (optional, for garnish)

Prepare the Meat
Heat ghee or oil in a large pot over medium heat. Add onions and garlic, sautéing until golden and fragrant. Add the meat, turmeric, cumin, coriander, cardamom, cinnamon, cloves, nutmeg, black pepper, and salt. Brown the meat on all sides to lock in the flavors.

Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a separate pot, bring the broth to a boil with bay leaves. Add the rice and cook until just tender but still firm, about 8–10 minutes. Drain any excess liquid if needed.

Layer the partially cooked rice over the spiced meat in the pot. Cover tightly with a lid or foil to trap steam. Cook over low heat for 45–60 minutes, allowing the meat to finish cooking and the rice to absorb all the spices and flavors.
