Mechoui (North African Roast Lamb)

Ingredients

  • 1 whole leg of lamb (about 4–5 lbs)
  • 4 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lemon
  • Fresh herbs for garnish (such as parsley or cilantro)

Instructions

  1. Prepare the Lamb

    Preheat your oven to 325°F (160°C). Make small incisions all over the leg of lamb and rub minced garlic into the cuts.

  2. Season the Meat

    In a small bowl, mix paprika, cumin, coriander, cinnamon, turmeric, cayenne (if using), olive oil, salt, and pepper. Rub the spice mixture all over the lamb, ensuring it gets into the incisions. Drizzle with lemon juice.

  3. Roast the Lamb

    Place the lamb on a roasting rack in a large roasting pan. Roast in the preheated oven for 3–4 hours, basting occasionally with pan juices, until the meat is tender and falls off the bone.

  4. Serve

    Remove the lamb from the oven and let it rest for 15 minutes before carving. Garnish with fresh herbs and serve with couscous, roasted vegetables, or flatbread.
