Fish Ambul Thiyal (Sri Lankan Sour Fish Curry)

Ingredients
- 500g firm white fish (tuna, kingfish, or swordfish), cut into cubes
- 2 tablespoons tamarind paste
- 1 tablespoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon black pepper
- 1 teaspoon fenugreek seeds
- 2 tablespoons roasted curry powder
- 3 cloves garlic, crushed
- 1 teaspoon ginger, grated
- 2 tablespoons coconut oil
- 1 medium onion, sliced
- 2 green chilies, sliced
- 1 cup water
- Salt to taste
- Curry leaves for garnish

Prepare the Marinade
In a large bowl, mix turmeric, chili powder, black pepper, crushed garlic, grated ginger, tamarind paste, roasted curry powder, and salt. Coat the fish cubes thoroughly with this spice mixture and let it marinate for at least 30 minutes.

Heat coconut oil in a heavy-bottomed pan over medium heat. Add sliced onions and green chilies, sautéing until the onions turn golden brown. Add the marinated fish along with the remaining marinade and fenugreek seeds.

Pour in 1 cup of water, bring it to a gentle boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the fish is cooked and the sauce thickens.
