Bahamian Rock Lobster, also known as spiny lobster, is a Caribbean delicacy known for its sweet and tender meat. This simple yet flavorful recipe brings out the natural taste of the lobster with a touch of garlic butter and fresh herbs, making it a perfect dish for any seafood lover.

Ingredients

For the Lobster:
  • 4 Bahamian rock lobster tails (about 2 lbs / 0.9 kg)
  • ¼ cup (0.06 kg) butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Lobster

    Using kitchen shears, cut through the top shell of each lobster tail and gently pull the meat upward, resting it on top of the shell. Preheat the grill to medium-high heat.

  2. Make the Garlic Butter

    In a small bowl, mix melted butter, minced garlic, lemon juice, salt, black pepper, and paprika.

  3. Grill the Lobster

    Brush the lobster tails with olive oil to prevent sticking. Place the lobster tails flesh-side down on the grill and cook for 3–4 minutes. Flip the tails over and baste generously with the garlic butter mixture. Continue grilling for another 4–5 minutes, until the lobster meat is opaque and firm.

  4. Serve and Garnish

    Remove the lobster tails from the grill and garnish with fresh parsley. Serve immediately with extra lemon wedges and melted butter.
